2-Minute Kale Salad

2-Minute Kale Salad with Lemon Honey Dressing

Ingredients

  • 1 bunch lacinato kale, chopped well

  • 1 lemon, juiced

  • 1 tsp raw honey

  • 2 tsp extra virgin olive oil (can omit for fat-free version)

  • Topping Ideas: chopped radish, fennel bulb, red onion, yellow onion, fresh fruit

Directions

  1. Chop kale, place in a bowl.

  2. Juice lemon.

  3. In blender or a mason jar, mix lemon juice, raw honey, and olive oil. Blend or shake well. This is your salad dressing!

  4. Pour salad dressing over kale. Toss/massage to spread dressing over kale.

  5. Sprinkle desired toppings over salad.

  6. Enjoy!

* Low Fat: 2 tsp of extra virgin olive oil contains about 9 grams of fat.

* A low-fat diet means 10-15% of calories come from fat.

* Example: On a low-fat diet, a woman who is 5’5” and 30 years old, and who weighs 150 pounds, would eat about 21 to 32 grams of fat per day. (21 grams fat = 10% and 32 grams fat = 15%).
