2-Minute Kale Salad with Lemon Honey Dressing
Ingredients
1 bunch lacinato kale, chopped well
1 lemon, juiced
1 tsp raw honey
2 tsp extra virgin olive oil (can omit for fat-free version)
Topping Ideas: chopped radish, fennel bulb, red onion, yellow onion, fresh fruit
Directions
Chop kale, place in a bowl.
Juice lemon.
In blender or a mason jar, mix lemon juice, raw honey, and olive oil. Blend or shake well. This is your salad dressing!
Pour salad dressing over kale. Toss/massage to spread dressing over kale.
Sprinkle desired toppings over salad.
