Quick Pizza Boats
Ingredients
1 sweet potato, sliced into long pieces, about 1/4 inch thick
1 cup marinara sauce
1 fresh tomato, diced
1 lime, juiced
Topping Ideas: cooked mushrooms, yellow onion, red onion, spinach, fresh cilantro/coriander, minced jalapeno, fresh basil, dulse, sea salt, red pepper flakes, diced black olives
Directions
Slice sweet potato, the long way, to create long pieces about 1/4 inch thick.
Bake sweet potato slices on parchment paper at 300 degrees F for 30 minutes.
Top sweet potatoes with marinara sauce, diced tomatoes, and any additional toppings.
Bake pizza boats additional 10 minutes.
Sprinkle potato boats with fresh lime juice.
