Vegan Fajitas (4 servings)
FAJITA “MEAT” INGREDIENTS:
1/2 onion, chopped
10 oz bag frozen mushrooms
1 medium sweet potato, spiralized
2 cloves garlic, minced (or 1/2 tsp garlic powder)
5 sun-dried tomatoes, diced
2 Tbsp coconut aminos
1 Tbsp fajita seasoning
optional: 1/4 to 1/2 tsp himalayan salt
DIRECTIONS:
Spiralize sweet potato.
In a ceramic pan, combine all fajita ingredients listed above.
Cook on medium heat for about 20 minutes, or until sweet potatoes are tender.
Scoop fajita “meat” into lettuce taco shells or Siete taco shells!
Add toppings like diced onion, tomato, bell peppers, or cilantro.
