Cilantro Mint Chutney

Cilantro Mint Chutney (2 servings)

Ingredients:

  • 1 cup cilantro

  • 1 cup mint leaves, very loosely packed

  • 1/2 zucchini (about 1 cup)

  • 1 clove garlic

  • 1/4 tsp fresh ginger

  • 1 lemon, juiced

  • 1 Tbsp olive oil

  • 1 tsp raw honey

  • 1/4 cup filtered water (may need a bit more, if you’re having trouble with blending).

  • 1/4 tsp himalayan salt

  • optional: 1/2-1 jalapeno

  • blender

Directions:

  1. Put all ingredients in the blender and blend until smooth.

  2. Pairs well with my Italian Potato Chips or try it as a salad dressing!

  3. Enjoy!

*This recipe is low fat. It contains 2 large servings, which each contain about 7 grams of fat.

* A low-fat diet means 10-15% of calories come from fat.

* Example: On a low-fat diet, a woman who is 5’5” and 30 years old, and who weighs 150 pounds, would eat about 21 to 32 grams of fat per day. (21 grams fat = 10% and 32 grams fat = 15%).
