Cilantro Mint Chutney (2 servings)
Ingredients:
1 cup cilantro
1 cup mint leaves, very loosely packed
1/2 zucchini (about 1 cup)
1 clove garlic
1/4 tsp fresh ginger
1 lemon, juiced
1 Tbsp olive oil
1 tsp raw honey
1/4 cup filtered water (may need a bit more, if you’re having trouble with blending).
1/4 tsp himalayan salt
optional: 1/2-1 jalapeno
Directions:
Put all ingredients in the blender and blend until smooth.
Pairs well with my Italian Potato Chips or try it as a salad dressing!
