Plant-Based Cheesy Potatoes

Plant-Based Cheesy Potatoes

INGREDIENTS:

  • 5 yellow potatoes

  • 1/2 tsp garlic powder

  • 1 clove garlic

  • 5 Tbsp coconut cream

  • 3 Tbsp fresh yellow onion, diced

  • 1 sun-dried tomato

  • 1/2 small lemon, juiced (about 1 Tbsp)

  • 1 tsp tomato paste

  • 2 tsp coconut aminos

  • 1 date, pitted

  • 1/4 tsp turmeric powder

  • 1/4 to 1/2 tsp himalayan salt (if desired)

DIRECTIONS:

  1. Cube potatoes.

  2. Steam potatoes in 3 cups of water until soft.

  3. In Blender, combine the Cheese Sauce ingredients:

    • 1 cup steamed potatoes

    • 1 clove garlic

    • 5 Tbsp coconut cream

    • 3 Tbsp fresh yellow onion

    • 1 sun-dried tomato

    • 1/2 lemon, juiced

    • 1/2 tsp garlic powder

    • 1 tsp tomato paste

    • 2 tsp coconut aminos

    • 1 date, pitted

    • 1/4 tsp turmeric powder

    • 1/4 to 1/2 tsp himalayan salt (if desired)

  4. Pour cheese sauce over the remaining steamed potatoes.

  5. Sprinkle with sea salt and pepper to taste. Enjoy!

*This recipe makes 3 servings, which each contain about 6 grams of fat.

* A low-fat diet means 10-15% of calories come from fat.

* Example: On a low-fat diet, a woman who is 5’5” and 30 years old, and who weighs 150 pounds, would eat about 21 to 32 grams of fat per day. (21 grams fat = 10% and 32 grams fat = 15%).
