Plant-Based Cheesy Potatoes
INGREDIENTS:
5 yellow potatoes
1/2 tsp garlic powder
1 clove garlic
5 Tbsp coconut cream
3 Tbsp fresh yellow onion, diced
1 sun-dried tomato
1/2 small lemon, juiced (about 1 Tbsp)
1 tsp tomato paste
2 tsp coconut aminos
1 date, pitted
1/4 tsp turmeric powder
1/4 to 1/2 tsp himalayan salt (if desired)
DIRECTIONS:
Cube potatoes.
Steam potatoes in 3 cups of water until soft.
In Blender, combine the Cheese Sauce ingredients:
1 cup steamed potatoes
1 clove garlic
5 Tbsp coconut cream
3 Tbsp fresh yellow onion
1 sun-dried tomato
1/2 lemon, juiced
1/2 tsp garlic powder
1 tsp tomato paste
2 tsp coconut aminos
1 date, pitted
1/4 tsp turmeric powder
1/4 to 1/2 tsp himalayan salt (if desired)
Pour cheese sauce over the remaining steamed potatoes.
Sprinkle with sea salt and pepper to taste. Enjoy!
*This recipe makes 3 servings, which each contain about 6 grams of fat.
